It’s getting colder outside and there’s nothing better to warm up with than a diabetic-friendly bowl of chili!
Ingredients:
1 tablespoon olive oil
1 small onion, diced
1 pound lean ground turkey breast
1 can (14.5-ounces) diced tomatoes with jalapenos
1 1/4 cup canned, low sodium chickpeas, drained
1 1/4 cup canned, low-sodium black beans, drained
1 1/4 cup canned, low-sodium kidney beans,drained
1 can (10.5-ounces) low-sodium chicken broth
1/4 teaspoon salt
1/4 teaspoon cumin
1/8 teaspoon cinnamon
1/8 teaspoon cayenne
Preparation:
1. In a large pot, heat the oil on medium-low.
2. Add the onion and sauté until soft (about 3 to 5 minutes). Add the turkey and brown it (about 5 minutes).
3. Add the remaining ingredients. Stir and bring to a boil, then reduce the heat and simmer for 20 minutes.
