1 pound rotisserie chicken, meat cut off the bone, skin removed
1 1/2 cups grapes, cut in half
1/4 cup finely sliced red onion
4 cups mixed salad greens
1 tablespoon olive oil
2 tablespoons red wine vinegar
1/2 teaspoon salt
1 dash black pepper or to taste
green onion, chopped for garnish (optional)
1. In medium sized bowl mix together oil, vinegar, salt and pepper. Add grapes and red onions, and let marinate while preparing the rest of the salad.
2. In a large bowl combine chicken and lettuce. Dress with grape mixture and serve.
