A true classic, this diabetic-friendly Sloppy Joe recipe is perfect for a day of watching football or on one of those cold fall nights!
Ingredients:
4 sprays vegetable oil cooking spray
1 onion, finely chopped
1 dash pepper to taste
1 large sweet pepper, seeded and finely chopped
12 ounces 95% lean ground beef
1 1/4 cups chopped fresh tomato or canned no-salt-added tomatoes
1 cup cooked or canned no salt added kidney beans, drained and rinsed, mashed with the back of a fork
4 tablespoons tomato paste (without added salt)
4 tablespoons cider vinegar
1/8 teaspoon clove
1/4 teaspoon cinnamon
1/2 teaspoon brown sugar
1/4 teaspoon salt
4 rolls whole wheat rolls (about 170 calories each)
Preparation:
1. Heat a large skillet over medium heat and coat with cooking spray. Add the onion and sweet pepper. Cook for 3 minutes, stirring.
2. Crumble in ground beef and cook until browned; keep breaking it apart with a spoon for about 4 minutes.
3. Stir in tomato, beans, tomato paste, cider vinegar, clove, cinnamon, brown sugar, salt and pepper to taste. Cook for an additional 4 minutes.
4. Divide the mixture evenly between the 4 rolls and serve.
