Spice-rubbed Pork Tenderloin

This tasty, diabetic-friendly Spice-rubbed Pork Tenderloin will instantly become a family favorite!

Ingredients:

4 cloves garlic, minced
2 teaspoons olive oil
2 teaspoons orange juice
2 tablespoons dried mustard
2 tablespoons dark brown sugar
1 teaspoon ground cumin
1 teaspoon dried oregano
1/4 teaspoon salt
1 pound pork tenderloin

Preparation:
Heat oven to 375° F.
Combine all ingredients except pork in a food processor until it becomes a paste, about 2 minutes..
Rub pork with mixture and allow to marinate at room temperature for 1 hour or in the refrigerator for up to 24 hours.
 Place in a baking pan and bake for 20 to 25 minutes, or until internal temperature reaches 140 degrees (the temperature will rise while it is resting). Let rest for at least 10 minutes before slicing. Slice into 1/2-inch-thick slices and serve
